Sheet pan shrimp boil

INGREDIENTS

 

  • 500g baby red potatoes, quartered.
  • 11/2 kgs raw medium shrimp, peeled and deveined.
  • ears of corn, cut crosswise into 4 pieces each.
  • lemons, sliced.
  • 1 Garlic Man Crushed Garlic
  • 2 melted Garlic Man Garlic Spread
  • 2 extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 2 Freshly chopped parsley, for garnish

FOR HOMEMADE MAYO

 

  • 1/2cup mayonnaise
  • 2tbsp finely chopped fresh chives
  • 1tsp Dijon mustard
  • 50ml Garlic Man Lemon Juice

METHOD

 

MAKE SHEET PAN SHRIMP BOIL

 

  1. Preheat oven to 220°C. In a large pot of salted boiling water, cook potatoes until just tender, about 10 minutes. Drain.
  2. In a large bowl, combine cooked potatoes, shrimp, corn, lemons, Garlic Man Crushed Garlic, melted Garlic Man Garlic Spread, and oil and season with salt and pepper. Toss until combined, then divide between two large baking sheets.
  3. Bake until shrimp is cooked through, and corn is tender, 13 to 15 minutes.

MAKE HOMEMADE MAYO

 

  1. In a small bowl, whisk together mayonnaise, chives, Dijon, Garlic Man Lemon Juice, and zest.
  2. Garnish dish with parsley and serve with Homemade Mayo.
